1st:

Burrata & Heirloom Tomato Salad

arugula | asiago cracker

2015 Rosé of Rhône Grapes, Vesper, Rancho Guejito Vineyard, San Pasqual Valley

feathery textured & fresh. not so much minerally, but not fat either.  kind of has a bandol thing going on.

2nd:

Zucchini Fritter

warm camembert | basil pesto

2015 Tavel, Château de Trinquevedel, Rhône Valley, France

gutsy & masculine like a tavel should be. big red fruit with a decidedly dry personality.

3rd:

Curried Cauliflower

pea puree | carrots | potato | cashews

2015 Rosé of Field Blend, Heidi Schröck, “Biscaya,” Burgenland, Austria

a wisp of RS gives a touch more texture.  a slight herbalness & refreshing acidity.  a wet rock earthiness.

4th:

Apple Tarte Tatin
